Here’s a go-to fall (pumpkin) recipe when you are bringing a dish to a friend’s party or having friends over for afternoon football or a casual movie night. Up front I’ll tell you there is a twist. Besides being crowd pleasing, your guests will enjoy guessing the secret (and surprising) ingredient! Kids will definitely love this recipe which you can make even when time is tight!
Rustic Fruit Tart
Last fall Danielle and I took a drive exploring the countryside of New Jersey. We found ourselves amazed at the small towns, lined with colonial period houses and horse farms over rolling hills. We had been told to be sure and go apple picking. We found a great place in Far Hills NJ. We grabbed a red flyer wagon and picked a bag full of yellow wine apples which was way more then we needed. So we made everything imaginable – pies, cheesecake, and more. Here is the first apple pie I ever made – I loved it! It was so much fun to make and delicious to eat that my mouth is beginning to water as I type. From here on in I’ll always find ways to utilize great local fruits.
Around this time of year small farmers markets start popping up all over the place. They offer a wonderful melody of local fruits. It’s a great time to take advantage of their abundances. This tart is much simpler then a pie, but with all the flavor. The crust is quick and simple, and the folded corners and golden texture melt away a scoop of your favorite ice cream. Dive in with your hands, and the kids will beg to help. Let’s get cooking!
Pizza Pot Pie
A few weeks ago, Matt and I found ourselves aimlessly walking around Wegmans, one of our favorite local grocery stores. We were a little tired and didn’t feel like cooking a big huge meal and no idea what we were shopping for. Note to self… don’t go to the store without a list!
Finally we stopped by the magazine isle to get some inspiration and came across a yummy, and thankfully simple, recipe by Giada De Laurentiis called Pizza Pot Pies. We ended up tweaking the recipe slightly, after all I do cook with the improve king, matt. Our pizza pot pie turned out beautifully and was really easy. It is a very kid friendly recipe and yet presents really well.
