Mexican Spicy Beef Tortilla

So we kicked off Latino Month with a fun Mexican dish that combines all the elements of great Mexican food: spicy rice, meat, and cheese–and don’t forget the heat. Need I say more? Skinny Minnie Tortilla Soup

Here’s a perfect soup to make during half-time of the Michigan football game. (You might not know this, but Chef is a HUGE Michigan football fan and schedules her Saturday plans around their games.)

This is not only a great soup for Saturday (or Sunday) afternoon football, it also falls perfectly into the Fall season and into Latino Month! It is one of the easiest recipes ever, AND it tastes great! (And did I mention that it is healthy and low fat/low cal at only 200 calories per cup if you don’t add the tortilla chips!)

Welcome to Latin Month! Cha Cha Cha!

This month we are going to explore the joy of Latin cuisine, from Mexico, South America, and a little Caribbean flavor. As a boy I loved the taste of fresh salsa, tacos, and re-fried beans, But now I’m ready to explore the wide world of Latin cuisines. With a little help from our friends at IMUSA we have the specialty tools, from plantain slicers to a tortilla press, we need to explore all the different possibilities.

We also want to get you guys involved in the action. This month we want you to send in your guacamole recipes for the ‘NoGrilledOnion Guac-Off’. From October 6th – 29th we will be taking entries for this years ‘Guac-Off’. The winning entry will receive a Volcanic Stone Mortar Molcajete made by IMUSA. Let me just say, they sent us one and I love it!
