It is cold and dreary outside. All I want to do is curl up with my book, drink some tea with the perfect tea cookie… shortbread. BUT it can’t be just any shortbread. Anyone who knows me, knows how I feel about chocolate… everything is better with chocolate! So, me and mom jumped into a recipe I have wanted to make for years…Chocolate Shortbread cookies!
Rustic Raspberry Turnovers
I love pastries and bread but was never willing to attempt them myself. I always assumed everything required yeast, or I wasn’t allowed to jump around with a pastry in the oven. When Danielle and I started dating she was quick to encourage me to try my hand. Since then I have realized that “these hands are golden!” Okay, that may be a little over the top, but I love playing with dough. It is always a great day in the kitchen if I come away covered in flour, and savoring something light and golden.
Chocolate Chip Challenge – Bitter Hot Chocolate Chip Cookies
It’s time to kick this contest in the butt. These cookies pack a bitter side with a punch. The mix of dark chocolate and the power of the chillies is a fantastic battle for your taste buds. You can play with the number and types of chilies to your liking.
Chocolate Chip Challenge – Classic Chocolate Chip Cookie
To me a chocolate chip cookie should be simple and pure, none of those extras like the Cook likes to put in. My goal is to create a soft cookie with the perfect blend of sugar and chocolate. This recipe has taken me years to perfect, and I live and die by it. The texture is mouth watering, and the colors are golden. Take this classic for a spin, and I would recommend fastening your seat-belt – it may blow you away.
Chocolate Chip Challenge – Dark Banana Chip Cookie
This is a new twist on the chocolate chip cookie. Using a simple blend of dark chocolates, bananas, and nutmeg. This cookie is the perfect treat that’s fast and fresh. While playing with this recipe we found a few tips that may help you create the perfect blend of cookie. By adding more butter to this mixture ( about 1/2 a stick) we produced a wetter batter. This caused the cookies to run while baking and resulted in a thin and crispy texture – these are great for coffee cookies. You can also substitute the 1/2 cup sugar for light brown sugar. This will create a softer cakier texture.
Chocolate Chip Cookie Challenge
The journey to find the perfect chocolate chip cookie has caused us to constantly search for the perfect recipe – more butter, less butter. dark brown sugar or light brown sugar, creamed or melted butter. We have gone so far as to try freezing the dough for the night.
This lead to this weeks challenge – ‘Who could create the perfect chocolate chip cookie?’ Now we understand that everyone has differing standards on the perfect cookie. Some like the crispy others like them soft. Some people love dark chocolate chips others plain old Nestle. Our goal was to create the softest cookie, that could still be dunked in milk, with the perfect blend of chocolate and dough.
