Skinny Minnie Tortilla Soup

Here’s a perfect soup to make during half-time of the Michigan football game. (You might not know this, but Chef is a HUGE Michigan football fan and schedules her Saturday plans around their games.)

This is not only a great soup for Saturday (or Sunday) afternoon football, it also falls perfectly into the Fall season and into Latino Month! It is one of the easiest recipes ever, AND it tastes great! (And did I mention that it is healthy and low fat/low cal at only 200 calories per cup if you don’t add the tortilla chips!)

Not bad, but not great…. yet!

Pizza Pot Pie

A few weeks ago, Matt and I found ourselves aimlessly walking around Wegmans, one of our favorite local grocery stores.  We were a little tired and didn’t feel like cooking a big huge meal and no idea what we were shopping for.  Note to self… don’t go to the store without a list!

Finally we stopped by the magazine isle to get some inspiration and came across a yummy, and thankfully simple, recipe by Giada De Laurentiis called Pizza Pot Pies.  We ended up tweaking the recipe slightly, after all I do cook with the improve king, matt.  Our pizza pot pie turned out beautifully and was really easy.  It is a very kid friendly recipe and yet presents really well.

Simple Roasted Chicken

Every cook needs a few can’t miss favorites in their back pocket. Me and Danielle were talking about ours and I realized I didn’t know one very simple dish – roasted chicken. We set out to find something rustic – this is ideal for me. I don’t wield the knife like a Samaria, no precision chopping machine. Keeping it light, simple, and rustic keeps the prep time to around 15 minutes. Grab your knife and let’s get started!
